Healthy Fruit Mince pies

I really love fruit mince pies and I’ve recently discovered these ones.

Since they were healthy and so yummy – I couldn’t resist sharing.

Once again, I’ve been tinkering with recipes from the Healthy Chef. Here’s the original:

  • 1 1/2 cups rolled oats
  • 1/2 cups rolled quinoa
  • 1/2 cup almond meal
  • 2 1/2 tbsps oil (rice bran or tasteless coconut)
  • 2 tbsp honey/ agave/maple syrup
  • 1/2 tsp vanilla paste
  • 1 1/2 tbsp almond milk

You’ll also need a fruit mince filling. You can get this from any grocery store, or make your own. One day I’ll get around to making my mum’s fabulous recipe!

Combine oats, quinoa and almond meal into a food processor. Add the oil, honey and vanilla.

Mix for about 30 seconds or until combined

Add the milk and process again. Remove from processor and form into a ball.

Roll out between 2 sheets of baking paper and cut into circles, large enough to cover the base and sides of your tart shells. I used my muffin tin, so a round scone cutter was a good size.

Grease the muffin tins, then place the pastry base inside, then fill lined tart shells with about a dessert spoon of the fruit mince.

Roll out rest of the pastry and cut out in the shape of stars, place them on top of the pies.

Bake in 150 C pre-heated oven for 30 minutes or until golden.

Allow to cool completely before dusting with pure icing sugar and eating. Makes 12 and they’ll last for about a week in an airtight container.

I hope that you have a joyous Christmas as we celebrate the birth of our Saviour.
