Apricot Power Bites

My kids love the Apricot Delights from the shops (and so do I, if I am honest!), but I am not thrilled about the amount of refined sugar in them (and all over them!)… so here is a much healthier, more filling and allergy friendly version.

They obviously still have quite a bit of natural sugar in them, but have fibre and protein missing from the store bought ones … and no refined sugar.

  • 200g dried apricots
  • 100g dried apples
  • 12 fresh medjool dates, seeds removed
  • 3 tbsps almond meal (or sunflower seed meal for a nut free version)
  • 3 tbsp flax seed meal
  • 3 tbsp rolled quinoa

Place fruit  ingredients into a food processor and process until thoroughly mixed and coming together well – this takes quite some time! Add in the dry ingredients and process very well.

Use a teaspoon and form into smooth balls.


Thermal Cooker:

Place apples and apricots in the bowl and process on speed 6 for about 10 seconds.

Turn on to speed 5 for about 30 seconds and one at a time drop the dates through the top.

When the dates are combined at the dry ingredients and process initially on speed 5 , working gradually up to speed 7 for about 45 seconds.

Scrape down sides and process again on speed 6 until the mixture has come together well.

Makes about 40.

Store in an airtight container in the fridge for up to 2 weeks.
