We are very excited to be preparing to welcome our new baby in March …. but although I am incredibly thankful to have been blessed with a 4th child, I am not at all thrilled to be heavily pregnant all over summer!!
I have already spent many afternoons convincing the kids to play in the paddle pool so that I can sit with my feet in it too … while we eat icy poles!
Shop bought icy poles are pretty tasty but the amount of colouring and sugar in them always makes me a bit nervous, so I have been making my own that are super easy and it is great to know that there is some goodness going in as well as the cooling off impact 🙂
- 1 large tin of apricots in natural juice
- 1 punnet strawberries, hulled and halved
- 1 tbsp chia seeds
- about 100g of coconut cream (don’t shake the tin – just use the thickest stuff from the top for creamier icy poles)
Place all ingredients in the food processor and blend until smooth.
Freeze in reusable containers.
This recipe makes about 18 … and I won’t tell you how long they currently last 😉
