My little miss is having an issue with ‘bits’ in food at the moment, so the yummy icy poles I normally make for them in warmer weather are out (for now!).
These are a more like an ice cream, and importantly for Ellie, they are sweet and smooth.
As always, I hide extras in there to help with her nutrition, but they are very well received by all 4 kids … as is the return of the paddling pool!
- 2 large ripe bananas
- 1 small very ripe avocado
- 1 heaped tbsp of white chia meal
- 2 tbsp agave syrup
- 1 270ml tin coconut milk (I like the Aayam brand)
Place all ingredients into high powered blender and process until very smooth … don’t want any tell tale green bits left!
I make these in my Nutribullet, simply for ease of clean up, but a powerful blender will work too.
Place into icy pole moulds and place in freezer until solid. This recipes fills 12 of my little Tupperware moulds.
