Honey Joys were a staple at Australian birthday parties in my childhood.
My kids love them and just quietly, it’s difficult to keep my husband away from the party food if they are present!!
When I started making them as an adult, for my own kids, I was always unsure as to why the standard Kelloggs Cornflakes recipe adds so much extra sugar? Honey is so sweet on it’s own! So this one is my tweaked recipe:
- 4 cups cornflakes (I use the Freedom Foods brand so it is Gluten Free and lower in sugar)
- 100g Nuttelex/vegan butter
- 2 tbsp honey
- 1 tsp vanilla bean paste
Some option extras for a more ‘grown up’ version
- 1 tsp chia seeds
- handful of toasted slivered almonds OR roasted, chopped sunflower seeds
To make a vegan version simple swap out the honey for another sweetener of choice – maple, agave or even rice malt syrup.
Melt together the Nuttelex, honey and vanilla until the mix is frothy (Speed 2, 100C, approx 2 mins)
Pour the warm honey mix into the cornflakes and mix thoroughly. If you are adding the extras, sprinkle them in after you have stirred through the honey mix.

Spoon into muffin cups that are lined with patty pans. Press down. Then place into a preheated 150C oven and bake for 15 minutes.
Remove from oven and allow to cool in tine for 5 minutes before transferring to a wire rack to finish cooling.
Makes about 20 – store in the fridge for up to a week… if there are any left over 😉
