These delicious and refreshing little bites are a great, light summer dinner or even as an appetizer.
They were inspired by the Tuna Cucumber cups from ‘Good for you‘.
- 1 large cucumber
- 1 tin lemon pepper salmon
- 1/2 cup corn kernels
- 1/2 ripe avocado, roughly mashed
- 1tsp fresh chopped dill
- Pinch pink salt flakes
Cut the cucumber into rounds roughly an inch high.
Use a teaspoon to hollow out some of the middle of the cucumber, leaving enough of a base in the cucumber cup to support the filling.
Don’t throw out the middle bits … Add them to a salad, or a smoothie …. Or do what I did, and snack on them while you’re prepping the meal 😉
In a bowl, mix together all the other ingredients.
Use a teaspoon to fill the cups with the salmon mix.
Serve immediately.
If you do need to make them ahead of time, keep the filling separate from the hollowed out cucumber, and then fill just before serving.
